Michael “Mick” Vininski, 59, of Windsor, Colorado, passed away on October 3, 2026. Mickey was born in Faribault, Minnesota, on May 4, 1967, to Vic Vininski and Sue (Gagnon) Carlson. He grew up on Roberds Lake, in a loving family with six brothers. He graduated high school in 1986 and attended the University of Wisconsin-Stout, where he studied Hotel Management. In 1993, he decided to move to Fort Collins with his college buddy. While working at the Marriott in Fort Collins, he met his future wife, Marcella. They eventually moved to Windsor, where they raised their daughter, Catrina and fell in love with the community.


Mick’s one true calling and passion in life was food. He worked for many different restaurants and country clubs and was recognized in newspapers for his work. During his time as a Sushi Chef, he invented the famous “Mick’s Nachos,” which were listed in the Coloradoan as one of the top dishes to taste. He truly loved to cook and often joined anyone in the kitchen, even if he was a guest, because his one true love language was food. Even though he loved cooking and being a chef, he changed career paths after Covid and became a United States postal worker.


Mick was known for being friends with everyone and would chat with many of his regulars either at the sushi bar or while delivering mail. He loved playing pool and cards with his neighbors on Friday nights and blasting rock and roll music with his daughter.


His favorite place to be was in nature, whether it was skiing in the mountains with his daughter or playing frisbee golf with his wife. He loved the water and grew up water skiing and ice fishing, and loved taking his daughter swimming.


Mick is survived by his loving family; wife Marcella, daughter Catrina, mother Sue Carlson, six brothers Joe (Bonnie), Zack, Marty (Jennifer), Alex, Mark (Minda) and James; sister-in-law Melissa Torres, brother-in-laws Chuck Torres, Randy Torres, Jim Torres, Rod Frick, 16 nieces and nephews and many other relatives and friends.


He was preceded in death by his father Vic Vininski, step-father Greg Carlson, mother-in-law Sally Torres, father-in-law Joe Torres, brother-in-law Billy Torres and sister-in-law Michele Frick.


A celebration of life will be held at Spring Canyon Park North, Creekside Shelter in Fort Collins, Colorado, on October 11, 2026 at 11:00am.
